Etna Rosso Qubba

The Monte Leone Winery has 5 hectares of vineyards, which are situated on two different sides of the volcano Mount Etna. With the grapes cultivated on the north face the red wines are produced. While on the east side, the altitude and climate are better suited for the white wines.

The harvest by hand takes place early in the morning and the grapes of Nerello Mascalese and Nerello Cappuccio are harvested in boxes of 10 kg. After destemming, the grapes ferment in small vats with selected yeasts but without temperature control. During maceration the upper layer of the must is broken up daily by manual pressing.
