The grapes of this Grillo are harvested in small boxes to avoid premature crushing of the berries. By a vibrating rack or conveyor, the grapes are transported to the press without using pumps. The grapes are gently pressed, the must is fined by natural sedimentation and fermented at a constant temperature with selected yeasts.
