In rural Valpolicella, in the middle of a small natural paradise among green olive trees and vines, the San Cassiano Winery was founded in 1964. Since every vineyard should have its own specific wine, the characteristics are carefully considered in all stages of production. The idea: each wine is a photograph of the vineyard to which it belongs.

The mash of the Amarone is added to the mash of the Ripasso Valpolicella. As the grapes of the Amarone are very intense and aromatic due to their drying for about 100 days, the mash of the Ripasso becomes more complex. This new mixture gets fermented together again. Therefore the wine is called Ripasso, which means repetition.

Vineyard: Vineyards in the Mezzane valley

Vineyard training system: Guyot

Vineyard soil: white marble

Vinification: maturation in barrique for 24 months

Contains sulfites

Characteristics

fresh and fruity, with a full-bodied structure without being heavy, but pleasant for any combination. It has notes of red fruit and is velvety on the palate

May be paired with

savory pasta, grilled meat, roasts, game and aged cheese

Certainly, when tasting the wines produced with passion, one begins a journey of increasing quality. We moved from rosés to whites and then to reds. The latter boast a reserve that few can be found in the area. One cannot but experience an elegant discovery.
